Peach Cobbler Butter Swim Biscuits

Another early morning, another recipe — and I’ve been having so much fun with these! Lately, these quiet sunrises have reminded me of my mom, up before dawn, filling the house with the sweet aroma of her classic carrot cakes. She’d bake them before heading to work so her clients could pick them up in the evening. Sometimes my brother and I would handle the pickups; other times, she’d make it home just in time.

Inspired by those comforting mornings and our mission to keep things simple and delicious, we tried our hand at the ever-popular butter swim biscuits — with a peachy twist. These are the perfect sweet-and-salty treat to kickstart the day!

Here’s what you’ll need:

Ingredients

  • ½ cup unsalted butter

  • 2½ cups all-purpose flour

  • 4 tsp baking powder

  • 4 tsp sugar

  • 1 tsp salt

  • 1¾ cups buttermilk (or make your own: 1 tbsp vinegar or lemon juice per cup of milk, let sit 5–10 minutes)

  • 15 oz canned diced peaches, drained well

  • Cinnamon, to taste

  • 1 stick salted butter (set aside — you’ll use this at the end)

Instructions

  1. Preheat your oven to 325°F.

  2. Place the unsalted butter in an 8-inch glass or ceramic baking dish. Microwave for 1 minute, then stir. Continue microwaving in 20-second intervals until fully melted. For a little razzle dazzle, sprinkle in some cinnamon and sugar directly into the melted butter.

  3. In a large bowl, sift together flour, baking powder, sugar, and salt. Add in the buttermilk and stir until just combined. Gently fold in the peaches — don’t overmix!

  4. Pour the dough into the buttered baking dish and spread evenly.

  5. Using a bench scraper or knife, cut the dough into 9 squares right in the pan.

  6. Bake for 20–25 minutes, or until the tops start to turn golden brown.

  7. While still warm, serve topped with extra diced peaches, a sprinkle of cinnamon sugar, a dab of salted butter, and a drizzle of warm syrup.
