Mama’s Drop Biscuits with Cheese & Sausage
Share
When I was a little girl, the kitchen was the place to be. My mom was always in there, creating something special from whatever we had on hand. She made all kinds of biscuits, but two types stood out the most: rolled and drop biscuits. Now, rolled biscuits were delicious—but to my impatient little self, they felt like they took forever. Drop biscuits, though? They seemed to appear almost instantly. Hot, fluffy, and comforting—especially when paired with turkey and grits. Those biscuits meant home.
As I got older and started dreaming alongside my mom about opening a retail space, she would always say she wanted it to feel like folks were just hanging out with her in her kitchen. A space full of warmth, good conversation, and even better food. What better way to bring that dream to life than by sharing the recipes that made our kitchen feel like home?
This drop biscuit recipe is a little twist on the classic—filled with sharp cheddar, savory sausage, and just the right amount of love. We even added a splash of champagne for a bit of razzle dazzle and topped it off with a drizzle of hot honey. And yes, it makes the perfect breakfast sandwich when you tuck a soft egg right in the middle.
We’re so excited to share this one with you. Let us know how it goes when you make them—we’d love to hear all about it. And if they don’t turn out just right, don’t worry—we’ll always have a fresh batch waiting for you.
Here’s how to make Mama’s Drop Biscuits with Cheese & Sausage:
Ingredients:
-
2 cups all-purpose flour
-
3 tsp baking powder
-
½ tsp salt
-
10 tsp cold salted butter
-
1 cup whole milk
-
1½ cups shredded sharp cheddar cheese
-
1½ cups cooked breakfast protein (we love turkey sausage)
-
¼ cup champagne (optional, but worth it!)
-
Hot honey, for drizzling
-
Egg (optional, for sandwich-style biscuits)
Instructions:
-
Preheat your oven to 350°F.
-
In a skillet, cook your breakfast protein of choice and set it aside. Shred your cheddar cheese.
-
In a large bowl, sift together flour, baking powder, and salt.
-
Cut in the cold butter using a dough cutter or fork until the mixture resembles coarse crumbs.
-
Make a well in the center of the dry ingredients and pour in the milk. Add the shredded cheese and cooked sausage. Stir with a rubber spatula until just combined, making sure to incorporate all the dry bits from the bottom.
-
For an extra-special touch, stir in ¼ cup of champagne.
-
Drop spoonfuls of dough onto a baking sheet. The size doesn’t matter too much—just keep them relatively even.
-
Bake for 12–15 minutes, until golden and cooked through.
-
Drizzle with hot honey while they’re still warm.
These biscuits are comforting, cheesy, savory, and just a little bit fancy. Perfect for breakfast sandwiches or all by themselves.
